DESCRIPCIÓN
Ultreia Saint Jacques is made primarily from Mencía, the flagship grape of Bierzo, complemented by small amounts of other indigenous varieties such as Alicante Bouschet and Bastardo (Trousseau). The grapes come from old vines situated in clay and limestone soils, which gives the wine a unique combination of freshness, minerality, and structure.
The winemaking process is entirely artisanal, with fermentation in concrete tanks using native yeasts and stem maceration, which highlights the varietal character and adds structure and complexity. The wine is then aged in a combination of used barrels, foudres, and concrete tanks, giving it smoothness and depth without masking the fruit.
