The current winery, launched in 2002, sits on very poor soils at about 800 meters above sea level. The climate is extreme, with strong thermal contrasts and practically non-existent rain. The stony sand and limestone soils struggle to retain the scarce rain. The 120 hectares of vineyards that surround the winery are mostly planted with the Monastrell grape, a true star in the Gil project. They also grow some international varieties such as Syrah, Cabernet Sauvignon, Merlot and Petit Verdot that add fruit and spices in some cuts, but it is the old Monastrell strains, a grape present in all the reds, that define the character of the wines. wines from the winery.
