It is a fresh and vibrant expression of the Waipara Valley, an emerging region on New Zealand's South Island renowned for producing wines with a strong varietal identity and aromatic purity. Sourced from family-owned vineyards situated on well-drained alluvial soils, this wine reflects the sustainable, low-intervention approach that has characterized Waipara Springs Winery since its inception.
The 2023 vintage was characterized by a mild climate with cool nights, conditions that favored slow ripening and excellent acidity retention. The grapes were harvested at their optimal ripeness to maximize aromatic intensity and preserve the natural freshness of the variety.
The winemaking process aims to preserve the varietal expression as much as possible: fermentation in stainless steel at low temperatures, without malolactic fermentation, to maintain the vibrancy and crisp character of the Sauvignon Blanc. The use of oak barrels was avoided to maintain a direct and expressive profile, true to the classic New Zealand style, but with a more delicate and mineral touch that distinguishes Waipara Valley from other regions like Marlborough.
