The winemaking process is characterized by the use of dry ice during pressing to protect the aromas and preserve the integrity of the fruit. Fermentation is stopped naturally through careful temperature control and sulfiting, allowing for a residual sugar level that results in its semi-sweet profile. The wine is not aged in oak barrels and is bottled young to preserve its freshness and varietal expression. With an approximate alcohol content of 12.5%, Valdelana Semidulce represents the combination of winemaking tradition and modern oenological techniques applied with precision.
