DESCRIPCIÓN
Located on a high plateau on the Madrid side of the Sierra de Gredos mountains, exposed to strong northwest winds, at almost 900 meters above sea level on granitic soils of sand and rock. With a total of 21 hectares trained in the traditional bush vine system and strictly dry-farmed, the landscape is characterized by historic vineyards, including Garnacha vines between 50 and 115 years old, which have stood the test of time, and Albillo Real vines planted between the 1930s and 1940s such as “El Pañuelo”, “Juez”, “Piñonera”, “Ribera” and “Andrinoso”.
After malolactic fermentation with indigenous bacteria, the wine is aged for eight months in used 500-liter French oak barrels, with bâtonnage at each full moon. Thirty percent is produced without sulfites, contributing greater richness, complexity, and creaminess. It is naturally clarified through winter cold and racking, without fining or filtering.
Pale in color, with aromas reminiscent of quince jelly, pears, honey, white flowers like orange blossom and jasmine, grapefruit peel, and balsamic notes. A truly unique white wine, with a smooth and silky mouthfeel, a slightly saline finish (from the minerality imparted by the granite), and a subtle bitterness characteristic of the variety, making it very personal, unique, and perfect for food pairings.
