The Maison boasts a unique history, one that is above all the story of a visionary spirit with an exotic and musical name. A name that seems tailor-made, almost by chance, for the town of Aÿ, where AYALA has been established since its inception. Edmond de AYALA, a curious and audacious man, always cultivated a taste for going the extra mile. Maison AYALA keeps alive the spirit of excellence and adventure instilled by its founder.
In 1865, Ayala, a pioneer in introducing a drier style, successfully launched "dry champagne" with only 21 g/l. A true commitment to purity compared to the traditional French dosage of the time, which exceeded 150 g/l.
From its inception, the young Maison emerged as a must-see reference and in 1882, it became one of the founding members of the Syndicate of Great Brands, the current Union of Champagne Houses.
For the past 10 years, the House has been working with great precision to increase the uniqueness and quality of its wines and reinforce the pillars that constitute the AYALA style: the pure expression of Chardonnay, the unique diversity of the crus, the bespoke blending, the reserve wines and the low dosage.
