Fermented in French oak vats and aged for 18 months in barrels (70% new), this wine from the 2021 vintage stands out for its early and optimal ripening, offering fresh black fruit with body and high acidity.

DESCRIPCIÓN

Viña del Olivo aims to be the maximum expression of the Contino terroir, as it is one of the few calcareous clay estates in Contino (the rest is almost all alluvial) with a very high content of active limestone, a slope of 5 to 7% with southern exposure, dry land and without the use of herbicides or organic fertilisation. A mineral wine for ageing, which expresses its modernity with harmony and balance.

To make Contino Viña del Olivo, the best bunches from our Olivo plot are hand-selected (a specimen close to 700 years old). They are carefully harvested in boxes and selected on the table. Once they reach the winery, they are taken to our selection table and fermented in 100 hl. French oak vats at temperatures of 28º to 30ºC for 10 days, after another 10 days of maceration. The malolactic fermentation takes place in the tank, and once this is finished, the wine is taken to new barrels (49% of the barrels) and second-use barrels (the remaining 51%), 80% of which are French and 20% American, where it remains for 14 months of barrel aging. After this period, it is placed in wooden vats for 2 months until it is bottled.
