Technology is a great tool that you have to know how to use to make a great wine, but it is not by itself what makes a wine great.
Our know-how is not based on following fixed rules for the use of technology in production or ageing, but rather on knowing how to interpret how to use it and adapt to the quality of each vintage according to the potential of the grape.
The correct use of oak barrels to complete the fermentation and maturation of wines is another of the fundamental steps for a correct production process.
