DESCRIPCIÓN

José Manuel is the soul of this winery where the entire process is carried out with great care and utmost attention to detail from harvesting to bottling.

Old vineyards, 40 to 70 years old. Quartzite soils of volcanic origin and clay-calcareous soils. Dry farming and sustainable production. Bunch thinning. Average production 700 grams per vine or 1,120 kg per hectare. Manual harvesting in boxes at dawn. Gentle destemming without crushing. Manual selection of grapes.

Pre-fermentation maceration at 2º for 5 days. Alcoholic fermentation at 25º. Aged in new French oak barrels for 14 months, with a personalized toasting.

Limited and numbered production.

Color rojo picota muy intenso con tonos violáceos.

Nariz

En nariz es profundo, intenso, de inicio fruta roja y negra, fruta madera. Fondo especiado, laurel, clavo; madera tostada, ahumados.

Boca

En boca entra elegante, fino, recuerdos frutales: cerezas, ciruela. Recuerdos a mosto. Paso equilibrado, con un tanino bien integrado sin asperezas. Final largo con un marcado posgusto de fruta en compota.
