Vinification includes spontaneous fermentation, whole cluster fermentation, and aging in French oak barrels, following Cristom's minimal intervention philosophy. DESCRIPCIÓN

It comes from the vineyard located at the highest elevation of the original estate, reaching between 166 and 224 meters in the Eola-Amity Hills near Salem, Oregon. Planted in 1997 and named after Eileen Gerrie, co-founder of Cristom, this parcel is distinguished by its southeast-east exposure, varied volcanic soils (Jory, Saum, Nekia, Ritner, Witzel, and Yamhill), and the marked influence of the strong winds of the Van Duzer Corridor.

Viticulture at Eileen is sustainable and minimally interventionist, with hand-harvesting, densities reaching up to 2,311 vines per acre, and an environment where the combination of deep and shallow soils, along with ocean winds, produces small berries and thicker skin, ideal for intensifying the structure and longevity of the wine.

In the winery, the 2021 vintage underwent spontaneous fermentation with native yeasts, approximately 51% whole cluster fermentation, fermentation in open vats with multiple daily pump-overs, and gentle pressing in a pneumatic press . The wine then rested for 17–18 months on its lees in French oak barrels, 32–34% of which were new, and was bottled unfiltered and unfined. .

The 2021 vintage is characterized by slow and even growth thanks to cool spring and warm summer weather, favoring balanced ripening . Approximately 816 cases were produced, and critics have recognized its quality with high scores: Jeb Dunnuck (96), Decanter (95), and Wine Enthusiast (92–96) .

This wine represents an expression of the extreme terroir of the plot: altitude, strong winds, diverse soils, and an agronomic and winemaking approach that seeks purity and longevity. Eileen has become one of Cristom's most awarded and emblematic labels, exporting the authentic essence of its origin.

Nariz

Intensidad aromática alta, con un bouquet que combina frutas rojas frescas como cereza ácida y frambuesa, junto a sutiles matices de mora y grosella. Se aprecian notas florales de violeta y pétalos secos, envueltas en delicadas pinceladas especiadas de canela y clavo, junto a un fondo terroso y mineral característico del viñedo.

Entrada fresca y sedosa, con taninos pulidos que aportan estructura sin restar suavidad. Destaca la pureza de la fruta, acompañada de una acidez vibrante que alarga el recorrido y realza su perfil elegante.
