DESCRIPCIÓN

Vineyard: The grapes come from a single vineyard dating back to 1930, located in the municipality of Hornillos de Eresma, covering 2.28 hectares. It is a traditional bush vine system planted on sandy soil with a deep sandy-loam horizon, which promotes water retention, ensuring complete grape ripening and maintaining acidity in this dry vineyard. The Verdejo grape's expression in sandy soils is more herbaceous and mineral, due to the lower heat absorption of sand compared to gravel. Yield: 3,500 kg. We practice organic farming.

Production: Hand-harvesting in 18-kilo crates allows for an initial grape selection in the vineyard. After a second selection on a sorting table, the grapes are macerated for 12 hours at a low temperature. Subsequently, spontaneous fermentation and aging on the lees for ten months take place in egg-shaped concrete tanks. These tanks are key to the winemaking process, offering an ideal solution to the ongoing exploration of the Verdejo variety's potential. Their shape and the temperature differences between levels create a circular airflow that facilitates lees work, while also providing better protection for the wine and allowing for longer aging periods without oxidation.
