DO Champagne is the French designation of origin that protects the production of sparkling wines from the Champagne region, made following the traditional method of second fermentation in the bottle.

Champagne wines are characterized by their complexity and elegance, with notes of white fruits, citrus, toasted bread and yeast. The Champagne region has various subregions that provide different styles and typicities to the wines, such as the Montagne de Reims, Côte des Blancs, Vallée de la Marne and Côte des Bar. The main types of Champagne wine are Brut, Extra Brut , Brut Nature, Sec, Demi-sec and Doux, depending on their level of residual sugar.
