DESCRIPCIÓN
PARAJE Las Encebras 2024 is a tribute to the resurgence of the native variety Airén in the Jumilla PDO, born from the Bruma del Estrecho de Marín project, led by Elena Pacheco and Isio Ramos. The wine comes from vineyards planted in the mid-1980s in the Las Encebras area, south of Jumilla, on sandy loam soils at an altitude of 380-400 meters. These old vines, between 35 and 40 years old, survive in conditions of drought and extreme heat, which gives the grapes interesting concentrations, despite the apparent varietal neutrality.
With the aim of recapturing its expressiveness, this 2024 edition breaks with the traditional production of white wines: after a manual harvest in September, it is fermented at a low temperature and a Maceration with skins and stems for 5–7 days, followed by aging in glass demijohns for 7 months under biological aging. The result is a A vibrant, delicate, and full-bodied white orange wine that reveals a refined aromatic profile and a light yet complex texture. PARAJE Las Encebras 2024 pays tribute to the hidden elegance of a grape once considered productive but now almost forgotten.
