Cava is a sparkling wine produced mainly in the Penedés region of Catalonia, Spain. It is made using the traditional bottle fermentation method, and is generally produced from white grapes such as Macabeo, Xarel-lo and Parellada. Cava is characterized by its fine and persistent bubble, and usually has notes of fresh fruits and balanced acidity. It is commonly used as an appetizer, but can also be paired with fish and seafood dishes, as well as with white meats and desserts.
