Paco & Lola is a winery founded in 2005 by a group of winegrowers and producers from the O Salnés region who decided to professionalise their production. This cooperative is called “Sociedad Cooperativa Vitivinícola Arousana” and is currently made up of more than 430 members, making it the largest cooperative in terms of number of members in the DO Rías Baixas.
The winery has 220 hectares of its own vineyards spread over more than 2,000 plots, typical of Galician smallholdings and located entirely in the “Val do Salnés” sub-area.
Our facilities are equipped with the latest technology applied to the wine sector. This modern technology, combined with the tradition of our winegrowers and the know-how passed down from generation to generation, allows us to obtain the maximum expression of the grape, guaranteeing a magnificent result year after year.
Throughout the year, our viticulture department carries out careful work focused on advising and monitoring the vineyards with the aim of achieving the highest quality grapes at the time of the harvest. We apply these exhaustive controls not only in all our vineyards, but also at each stage of the winemaking process, guaranteeing the highest quality of our products.
Albariño is an early ripening variety, so the start of the harvest is normally in the second half of September. and it passes over two weeks, a period that varies depending on the state of ripeness and the quantity of grapes to be harvested.
Following tradition, grapes are harvested manually in boxes with a maximum capacity of 20 kilograms, so that the grapes are kept in optimal conditions from the moment of harvesting until they are received at the winery.
Albariño is considered one of the most important grape varieties grown in Galicia. It is an early-ripening variety with small bunches, golden-coloured and sweet grapes, which stands out for its great capacity for sugar production and its richness in acids.
Since its inception, Paco & Lola has been committed to sustainable production by carrying out integrated management of vine cultivation. This is a plus in terms of sustainability and respect for the environment.
Since 2010 we are members of the Life Project “Viñas Atlánticas” (Life + Atlantic Vineyards) , an innovative project that involves all winegrowers to minimize the use of chemicals, through different techniques and coordinated actions within a System of Environmental Management.
