A double manual selection of bunches and berries is then carried out, removing any remaining stems, raisined berries, or unripe grapes. The grapes are transported in 300 kg containers to the French oak fermentation tanks.\u003c\/p\u003e\n\n \u003cp\u003eMalolactic fermentation takes place in 225-liter French oak barrels. For the first five months, each barrel is turned twice a week to circulate the sediment, thus enhancing smoothness and body. From May onwards, the wine is left to settle, allowing the sediment to sink to the bottom by gravity and be separated by racking.
